Pork and Zucchini Salad

Ingredients

  • 3 zucchini
  • 15 mL (1 tbsp) old-fashioned mustard
  • 15 mL (1 tbsp) Maple Pork Rub
  • 500 mL (2 cups) baby spinach leaves
  • 375 mL (1 ½ cup) pork, cooked and thinly sliced
  • 60 mL (¼ cup) olive oil
  • 15 mL (1 tbsp) cider vinegar

Optional:

  • 1 red onion, thinly sliced

Directions

  1. Cut zucchini into julienne strips.
  2. In a salad bowl, whip mustard with pork seasoning, olive oil and vinegar.
  3. Add spinach leaves, pork slices, zucchini strips and, if desired, red onion. Add salt and pepper.
