Thai Honey Chicken Brochettes

Ingredients

Marinade

  • 80 mL (1/3 cup) of Thai honey
  • 30 mL (2 tbsp) of canola oil
  • 10 mL (2 tsp) of Maple vinegar
  • 2 garlic cloves, crushed
  • 2 mL (½ tsp) salt
  • Freshly ground pepper

Brochettes

  • 675 g (1 ½ lb) of boneless, skinless split chicken breasts, cut into cubes
  • Fresh coriander

Directions

Preparation time: 10 minutes
Cooking time: 15 to 20 minutes

  1. In a large bowl, mix all ingredients for the marinade. Put aside a third of the preparation. Add the chicken, cover well with the marinade and let marinate in the refrigerator from 1 to 2 hours. Remove excess liquid.
  2. Preheat the oven at 200ºC (400ºF) or the barbecue on medium heat.
  3. Loosely thread chicken cubes onto skewers. For oven cooking, place brochettes on a baking sheet lined with aluminum paper. For barbecue cooking, oil grill before placing brochettes on grill.
  4. Brush remaining marinade on brochettes while grilling, turning them over every 4 or 5 minutes. (Be careful when grilling on barbecue since sweet marinade tends to burn.) Cook until chicken meat is evenly cooked. Garnish with coriander, and serve with grilled vegetables and basmati rice.
