Smoked Duck & Maple Jelly Salad

Ingredients

  • 15 mL (1 tbsp) old-fashioned mustard
  • 60 mL (¼ cup) chopped walnuts
  • 500 mL (2 cups) corn salad (also known as lamb's lettuce)
  • 1 85 g (3 oz) package of smoked ducked, sliced
  • 125 mL jar Maple jelly
  • 15 mL (1 tbsp) balsamic vinegar
  • 60 mL (¼ cup) olive oil
  • 2 green onions, chopped (optional)
  • 250 mL (1 cup) blueberries (optional)

 

Directions

  1. In a salad bowl, mix mustard with walnuts, vinegar, oil and, if desired, green onions. Add salt and pepper.
  2. Add corn salad, duck slices and, if desired, blueberries. Mix together.
  3. Garnish salad with organic maple jelly, cut into small cubes
