Maple-Soy Glazed Salmon

Maple-Soy Glazed Salmon

Ingredients

  • 1 kg (2 lb) whole boneless salmon filet
  • 65 mL (1/4 cup) maple taffy
  • 2.5 mL (1/2 tsp) finely grated lime zest
  • 30 mL (2 tbsp) each soy sauce and fresh lime juice
  • 30 mL (2 tbsp) butter, melted
  • 5 mL (1 tsp) coarse salt
  • 2.5 mL (1/2 tsp) coarsely ground black pepper
  • Fresh chives and lime wedges for garnish

Directions

  1. Preheat the grill to medium-high. Set a clean piece of untreated cedar plank that has been soaked in water for 2 hours or a piece of heavy-duty foil that has been pierced several times on the grate. Lay the salmon on a baking sheet.
  2. Blend the maple taffy with the lime zest, soy sauce, lime juice and butter until combined
  3. Sprinkle the salmon evenly with salt and pepper
  4. Slide the salmon, skin side down, onto the cedar or foil. Grill for 5 minutes.
  5. Baste liberally with the glaze
  6. Reduce the grill temperature to medium; cover and continue to grill, without turning, for 5 to 7 minutes or until the salmon flakes easily when tested with a knife
  7. Garnish with fresh chives and lime slices

Tip: this glaze is also delicious on grilled chicken or pork
