Maple Marinated Barbequed Shrimp

Maple Marinated Barbequed Shrimp

Ingredients

  • 16 - 8/12 size peeled and deveined jumbo shrimp*
  • 4 lemon grass stalks
  • 60 mL (1/4 cup) maple vinegar
  • 125 mL (1/2 cup) olive oil
  • 125 mL (1/2 cup) maple syrup
  • 15 mL (1 tbsp) Dijon mustard
  • 15 mL (1 tbsp) chopped fresh herbs (thyme, basil, parsley)
  • Juice of 1/2 lemon
  • ¼ red onion, sliced
  • Salt and pepper to taste

*Or substitute salmon or tuna chunks 

Directions

  • Skewer the shrimp on the lemon grass
  • Mix all the other ingredients together and marinate shrimp for 24 hours. Place on a preheated grill, drizzle on extra marinade as it is grilling
