General Tao salmon with Thai flavour honey (created by Giovanni Apollo)

Ingredients

  • 500 gr salmon cut into large cubes

 

SAUCE

  • 75 ml Thai flavour honey
  • 50 ml sesame oil
  • 1 onion, chopped
  • 2 tbsp ginger, chopped
  • 2 cloves of garlic, chopped
  • 1 tbsp sriracha or sambal oelek sauce
  • 60 ml soy sauce
  • 2 tbsp tomato paste
  • 60 ml rice vinegar
  • 60 ml fish sauce
  • 3 cups chicken broth

 

BATTER

  • 5 tbsp flour
  • 5 tbsp cornstarch
  • 2 eggs
  • Salt
  • Cold water

Directions

BATTER

  1. Mix all ingredients carefully without over whisking until batter is liquid and coats well.
  2. Set aside in fridge and stir occasionally.

 

SAUCE

  1. In a saucepan, add sesame oil, onion, ginger and garlic. Cook on medium heat for 2 minutes.
  2. Add the Thai flavour honey, soya sauce, rice vinegar and fish sauce.
  3. Simmer for 4 minutes then add the tomato paste, sriracha and poultry broth. Continue cooking on low for 3 minutes or until the sauce thickens.

 

SALMON

  1. Heat oil in a saucepan or in a deep fryer at 375 °F.
  2. Dip salmon cubes in the batter and then fry 1 minute. Drain on absorbent paper.
  3. Add the salmon cubes to the sauce, completely coating the pieces of fried salmon by mixing carefully.
  4. Serve hot on white rice.
