Crispy pork rinds caramelized with maple syrup

Ingredients

140 g or 1 L (4 cups) store bought crispy pork rinds (fried lard)
250 ml (1 cup) of golden maple syrup, delicate taste
30 ml (2 tbsp) of corn syrup
10 ml (2 tsp) of butter
Maple fleur de sel 

Directions

  1. Preheat the oven to 190 °C (375 °F).
  2. Heat the crispy pork rinds in the oven on a large baking sheet for 3 to 5 minutes.
  3. Transfer to a large bowl. Set aside.
  4. Line the large baking sheet with parchment paper. Set aside.
  5. Put the maple syrup, corn syrup and butter in a small thick based sauce pan with tall sides. Bring to a boil on medium heat, without stirring.
  6. Cook for 15 to 20 minutes, until the temperature reaches 150 °C (300 °F).
  7. Quickly pour the caramel on the crispy pork rinds and, using two forks, mix vigorously to cover well.
  8. Immediately spread the crispy pork rinds on the baking sheet.
  9. Sprinkle with maple fleur de sel. Pull apart any crispy pork rinds that are stuck together.
  10. Let cool completely, approximately 30 minutes. Serve.

    Note: Can be kept in refrigerator in an airtight container.
