Chicken burgers with maple pickled cranberries

60 ml (¼ cup) of maple pickled cranberries, drained and chopped
60 ml (¼ cup) of red onion, sliced thin
30 ml (2 tbsp) of maple mustard
45 ml (3 tbsp) of fresh tarragon, minced
450 g (1 lb) ground chicken (or ground turkey)
Maple pepper
4 hamburger buns
80 ml (⅓ cup) of mayonnaise
60 ml (¼ cup) of cranberry, maple, blackcurrant spread
Frisée lettuce


  1. In a bowl, mix together the maple pickled cranberries, red onion, maple mustard, tarragon and ground chicken. Season with salt and pepper. Shape into 4 patties.
  2. Preheat the barbecue to medium heat. Cook the patties on the oiled barbecue grill (with lid closed) for 10 to 12 minutes or until they’re no longer pinkish inside. Flip midway through the cooking.
  3. Meanwhile, mix the mayonnaise and the cranberry, maple, blackcurrant spread. Season with pepper. Set aside.
  4. Toast buns on the barbecue grill for 2 minutes or until golden.
  5. Place chicken patties on the buns, garnish with the fruity maple mayonnaise and lettuce. Serve.


    Replace the ground chicken with ground duck.
