The Citadelle Maple Syrup Producers’ Cooperative has a well-established reputation for innovation in the processing and marketing of maple syrup and honey products. Now, with its new cranberry plant in full swing, the Cooperative is leading the way in bringing the highest quality cranberry product to market.
The Cooperative’s new 55,000 sq. ft. facility has an installed capacity of 25 million pounds of cranberries annually, and produces both whole dried fruit and juice. What makes the plant special is its leading-edge fruit drying technology, in which a very small amount of juice is extracted from each berry, resulting in in a plumper, moister cranberry that is winning over manufacturers in the food processing sector. The 100% natural process also involves drying the berries longer at a lower temperature in order to lock in the fruit’s optimal health benefits.
Of course, Citadelle’s cranberry production follows the time-honoured cooperative model that’s been the basis for the company’s success with maple and honey products.
